I would also like to run into homes uninvited and spectate what people are doing during their daily lives.
Maybe sit down by their table and have a meal.
Invite some friends and ERP on their daughters bed.

But... that's normal though. Those are private dwellings.
Ul'Dah has taverns and businesses/guilds that you can walk into which is pretty different since those are public establishments.
GTA V and Witcher 3 also don't allow you to go in every and any building.
It's a trade off.
What you want is more like the Bethesda games (Elders Scrolls, Fallout) but, honestly, those don't scale well - places that are meant to be cities often feel more like villages.
Think about it, nobody wants to die, there's rules to this game son, I'm justified.
It's not the houses that is the problem, it is some of the restrictive area, simple jump off the side of the steps would get you to the bottom, but an invisible barrier stops you from taking a short cut. There are loads of places like this throughout FF14 that kinda break immersion more than trespassing in a random NPCs house
If you feel like going into random people's houses the housing wards are perfect for just that purpose. Most people allow random people to enter anyhow.

This is a complaint I can get behind. Can't begin to count how many times in SB already where I tried to take a shortcut off a cliff, only to be met with an invisible wall that forces me to go the long way or get so close to the bottom that leaping off doesn't save my any time. It's not the houses that is the problem, it is some of the restrictive area, simple jump off the side of the steps would get you to the bottom, but an invisible barrier stops you from taking a short cut. With this character's death, the thread of prophecy remains intact.

I was stuck grinding the innkeep in Ishgard for his triple triad card, and the SOUND of fall damage from people jumping over the railing above started to gross me out. A cacophony of cracking ligaments, knees snapping and legs fracturing, followed by players lurching their broken bones to the dark knight trainer in hopes of unlocking the inner darkness within their now crippled bodies. This is a complaint I can get behind. Be kind to your joints and take the long way down. You'll thank me when you're older and can still walk.

Either way I feel that a few buildings should be open. They don't all have to be. When there's none, it just feels off.

we have yet to have a game like that where you can go in buildings and it's loaded with content inside as well as outside.
