You can't. But you don't outlevel too quickly. Instanced Story Content is synced what means if you want to do a Lvl 50 you will be scaled down to max. Lvl 52 for this specific Content even if you r i.e. lvl 60

Don't think so, but you can do the content on different classes/jobs.
Skip most sidequests while leveling your main job, and then go back and use them to get exp when leveling a new class. Doing it that way you should be able to avoid overleveling things too badly - and have a way to get xp for other classes more easily than normal.

You won't get quite the same experience as when doing sidequests in parallell with the Main story, but it all depends on how into lore and story you are.
