I know that it is technically impossible to have a 'one-piece' due to how gear equipment is split between chest and legs, but I think it would be nice to have something close to a one-piece swimsuit.

Actually, we have gear that takes the head and chest slot (Those weird tank sets). Gear that takes feet and leg slot (Again those weird tank sets). We have gear that takes up all of your slots like the Minfilia costume. They can quite apparently do gear that takes up multiple slots at once in one piece. So I don't think it's there's a substantial technical limitation.

Some magical glamour shoes that make our character actually barefoot would help too.

I know about the height issue, but going around swimming with sandals permanently fused to our body is just.. bleh.

It's not impossible for them to add a one piece swimsuit at all dude. The chocobo suit normally took up like three different gear slots, but now it can be glamoured without any issues.

There's armor pieces that take up multiple slots already.

They'd just need to design it to take up the legs and body slot.
