It doesn't really matter if they come in one potion or two unless you think doing job quests are terrible things to do. You don't actually level SMN or SCH. You level the ACN. A SMN potion would give you an 60 ACN with all the SMN job quests completed. From there, you just have to do the SCH quests to get a level 60 SCH.
@Class removal, It was stated that they intend to remove the classes during the Stormblood content cycle, with their estimate being most likely towards the latter end of it.

Yes it is at the start of the expansion, later down the road it will probably be unlimited. As it stands right now at launch, you're allowed 1 potion, that you can use on only one job per character. This doesn't apply to RDM and/or SAM.
Small correction: Per service account rather than per character.
My guess is that only 1 job get all jobquests cleared, while the other job still have to do all the lv30-60 jobquests.
You'll probably receive only one crystal job for the job you selected, but ACN will be leveled to 60. So if you want another job ready, all you have to do is do your job quest for the one you didn't pick and get some gear.
That'll surely be the fastest way for someone to have two roles available asap.
This is, without additional citation, largely still speculation on whether it will actually happen. Last I heard was an answer that indicated that if they did it, it wouldn't be until later on - possibly a 5.0 change - but as of now the only confirmed change to classes is the removal of needing to have one at 30 and a second at 15 to unlock a particular job.
