I get what you mean, though - The people in our city-states aren't very zealous, aside from the death and sin worshiping THMs. The Limsans invoke the Navigator on the seas, but the Gridanians are pretty distracted with the elementals, woodsin, sylphs, and invading imperials. I haven't heard them mention much Nophica.
I'm willing to bet we'll hear a lot more of it after the Dalamud Incident comes to fruition. First of all, Ishgard has an Archbishop in charge and people tend to get a little more zealous about their faith after a tragedy.

Menphina - No centralized worship; moon deity associated with love (Worldwide worship?) Mi'qote, Keepers of the Moon
Thaliak - Sharlayan; Associated with Wisdom
Nymeia - No centralized worship; associated with the heavens and fate (Worldwide worship?)
Llymlean - Limsa Lominsa; watcher of the sea.
Oschon - No centralized worship; watcher of mountains/nomads (Worldwide worship?)
Byregot - No centralized worship; the builder (I bet we'll see more of him after the cataclysm)
Rhalgr - Ala Mhigo; associated with destruction (I guess Ala Mhigo was asking for it.)
Azeyma - No centralized worship; Sun deity associated with inquiry (Worldwide worship?) Mi'qote, Seekers of the Sun
Nald'thal - Ul'dah; associated with transactions and death
Nophica - Gridania; associated with nature and the harvest
Althyk - No central worship; associated with time and change. (Worldwide worship?)
I actually have heard them mention Nophica a bunch of times in Gridania. Especially for my CNJ quests./bow.

I was actually thinking about this the other day. In Eorzea it seems the twelve aren't really an extension of any religion, it's kind of just an accepted belief throughout the entire continent. So it's less of a religion and more of the culture of Eorzea, it's just widely accepted that the twelve are real and are their gods. If I'm not mistaken even the Garleans have no issue with the twelve, only the Primals.

What do you think THMs are? They got two temples in Ul'dah.
The THMs have built separate shrines to both Nald and Thal, but these two entities are together as one in the deity Nald'thal (overseers of Commerce and The Underworld). I'm not sure if there's much lore about the twins as separate entities yet.
In order to understand Thaumaturge worship, you kinda have to be up on your Greek mythology as pertains to the constellations. Gemini is a singular entity made of the twins Castor and Pollux (one being a mortal and the other the son of the god Zeus) - after being cheated on a business deal (COMMERCE), Castor and Pollux stole the cattle of those who cheated them and Castor was killed. Pollux petitioned Zeus to let Castor share his immortality - and Zeus granted it on the condition that as Gemini, they would travel between Mount Olympus and The UNDERWORLD on alternating days. (Explaining the stars' movements across the sky.)
