Because "Blacksmith's [item]" and "Culinarian's [item]" is any way different from "...of Fending". By what you're claiming, it'd be perfectly acceptable for the item to be "Paladin's, Warrior's, or Dark Knight's Breastplate". And yes, because all three jobs share the gear, you'd need to include all three job names in the item's name, or just call it "...of Fending" and be done with it.
