That's cause they have 25 of their own buttons to worry about too.
If a pet heavy class was designed that way from the start, a lot of your abilities would be the pet's.
I'd like to see Summoner. Like bass9020 on the first page said, it's strange they've not added this FF classic yet. You'd think it'd be a high priority given its status in the series! It's also likely to meet most people's expectations as the job's themes are fairly well established - I mean, presumably the summon or pet would be the main focus of the job.
Failing that, other pet-focused jobs like Beastmaster or Puppetmaster would be fun. I'd also like a pure support class - maybe something like Green Mage, or possibly even Bard, which I'm also surprised they haven't already added.
I'd also like to see a decent hybrid Red Mage added too. Obviously the hybrid element is a key part of the job's identity, so it'd be a real shame if they cheesed the melee component as just a gimmick without any real substance, or focused on just one aspect of the job at the expense of the others. But I'm certain they would never rip apart a job's well-established identity just to crush it into a balefully inadequate and poorly thought out job system. That would just be absurd!
I feel if the pet itself was under full control and the player followed behind or even the pet moving in sync with us I feel it would work better. Being our 1-2-3 combo is actually the pet doing the work while our character simply waves their hand/signals/commands the strikes. The pet being the actual weapon, maybe the pets could change based on weapon? True glamour there I'd think or perhaps the pets could get their own created interface like when we create ourselves/retainers that can be changed with the use of a Pet Fantasia.
However, here is an example I feel would fit for the game.

However, as I said, imagine the pet just being on a leash/chain in front of us while doing the same. We ourselves do no actual fighting.

I'd like to see Viking. Game lacks a hammer wielding class. No, blacksmith doesn't count.

- Dancer
- Geomancer
I mainly want to see what Yoshi P. Would do with Juggler. It would be interesting to see. Could use Ninja gear.
Puppetmaster and a real Bard class. Though I like the current Bard in the game, reading FFXI's version really made me want to try their's out and it'd be nice to have a different type of DPS that isn't all about attacking. And with Puppetmaster, I find it both cute and really cool how FFXI's verision mimics it's master's every move and attacks for them.
Though I doubt either of these classes will be added to FFXIV, I'm a tiny bit hopeful they do.

1. Ranger - non cast ranged dps
2. Dancer - healing melee
I like everyone else's ideas so far but those are my top 2 that I would love to see but pretty sure it won't happen.

Jobs I would like to see:
- Dancer
- Blue Mage
- Rune Fencer
- Puppetmaster
- Beastmaster
- Geomancer
- Corsair
- Gun Mage
Those are just some off the top of my head
