I'm not so sure this is true. I've known people in both games that quit and never came back. It's not like any game appeals to absolutely everyone, not even WoW.
I thought I'd seen that too... people in my endgame community in XI who just up and left and never bowed to the temptation to return. But then during one of XIV's content droughts, I decided to pop into XI and see how everyone was doing -- and they were all freaking back. Even the ones that'd been gone for years. It was bizarre.
I can see people quitting after deciding they don't like it - but after having liked and played it for a while, my anecdotal count of successful quitters lies ominously at zero, again.

I quit FFXI a few months before Promathia and never came back, unless you count playing XIV as coming back.
Though I'll be staying, I take people at their word when they say they're quitting. There is a lot not to like about this game. I chose to stay because I want to watch the metamorphosis, but I don't expect everyone will come to the same conclusion.
