My biggest fear is that "Summoner Glamour" is going to amount to dumping a load of different colored Carbuncle skins on us, dusting off their hands, and calling it a day.

I mean, sure, it'd be great to glamour as Carbuncle, but I hope the pet glamour system is a bit more robust than that...

I know that Ulan (an NPC in the Anima questline) has a Diamond Carbuncle. That's by far the prettiest Carbuncle I've seen thus far.

My biggest fear is that not only will it be that, but it'll be thrown into the cash shop as well for like $5usd per color.

I'm resigned to that. It's already the case that SMNs generally don't use more than ONE of their THREE summons. Where would be the value in adding three MORE summons that Summoners don't use?

Maybe SE will one day buff Titan and Ifrit to the point where they can compete with Garuda, or give them skills that make them more valuable in certain party configurations. When that day comes, perhaps I'll get enthusiastic about the idea of additional summons for SMN. But for now, Contagion is simply too hard to compete with, and giving us three new summons that can't compete with Contagion would be a wasted effort.

If SE has no plans to rebalance the pets Summoner has (and it certainly seems that they don't), then giving us the illusion of additional summons by, for example, allowing us to summon a Ramuh that performs the same type of attacks as Garuda, is about as good as we can hope.
