Do you honestly think people will do that before they simply unsub and play something else?

Personally, I'm wholly expecting a Nidhogg nerf. I haven't even done that yet, but if it's a MSQ wall with bad clear rates as people say, it'll be torn down sooner or later. No questions asked.

    Would we really miss them?

In my eyes, it would let back a healthier playerbase, which would be better for the game in the long run.

Well of course we would miss them. Possibly not directly if you never use the duty finder, but there is one rule about players:
    The subscription is the same.
The income, some would say lifeblood of the game, is the only thing that keeps it ongoing with continual new content.

Apart from the very small percentage of completely obnoxious people, (and of course any hackers in a game), I can never understand calls for players to quit. Even more so in a subscription game.

I played Wildstar for quite a while, stuck with it when people started leaving. And the forums where rife with discussions on dungeon severity, but each of these discussions where invariably accompanied by the calls for the relevant player to leave if he/she couldn't manage it - together with the usual insults.

And you know what - they did.

You missed the argument "in the long run". Its also possible that alot of willing to learn players (and possibly more stable subscribers) quit the game because of "them" or because of the stupid easy DF content we had before. From my personal experience, people that don't bring any effort into a game, are more unstable in staying in a game for a longer time than these, that bring their love into it.

I didn't miss it. If this development company is run like any other business, they have monthly financial targets and results. A drop for a couple months doesn't mean they sit back and say the business will be better for it.
They take action - often immediate, especially near quarter earnings report times.

Now I do take your point about a stable population, but taking the assumption that enough people would return to make up for those who leave is a gamble, and I can't honestly see many businesses operating that way.
