I got really bored while playing through FF7 near the endgame, didn't feel like doing that slog through the crater at the very end so I spent hours in gold saucer just playing g-bike and snowboarding. >_>
The bike is modeled already...
Like someone already said they should not have made it such a grind (imo). Yes you only need to farm it for the items but in my opinion these are way to overpriced. Fenrir could have been half the price and it still would have taken people a long time to get there. (At least playing it casual) Wanting another million MGP for a single card is also horrible. And lets not talk about the RNG involved for getting TT cards..I was really excited for this one but the rules of the NPCs and that bad droprate really put me off collecting them further. And lets not forget that more cards and items will be included later so it never ends (which should be a good thing but I already fear the grind for another item I want).
Things like LoV were something I was also really looking forward too but I hoped for something like Pokemon and not for something this complex. Its does not make fun.
So: Less grind, cheaper items and more simple but fun minigames

A: In older MMOs, such as Ultima Online, there was a house maintenance fee you had to pay weekly, but in FFXIV: ARR we decided against this system. Similarly, these older MMOs also had a system where your house would break down if you didn’t log in after a while in order to have you continue your subscription, but this is a thing of the past and we won't have any system like that.
After the MGP changes last patch, I can't agree that items are overpriced. It's really easy to get them now.

The reason I said this is the exact reason that LoV is dead and chocobo racing isn't. LoV is designed to be social, and nobody can find a game. If SE makes more social content it will further dilute the playerbase. If people are in gold saucer queues, they aren't in battle queues, or pvp queues, and thus these pieces of content compete (battle content wins every time). Chocobo racing doesn't have this problem because it runs no matter what, with NPCs taking the place of players.
Your point about substance is the exact point I'm trying to make about endgame, there needs to a goal, a reason to grind THAT content (fenrir doesn't count), my idea about a CC club to incentivise card collection is one way, and there are many more (chocobo racing top league). In the absolute loosest sense you could call these the savage raiding equivalents of the gold saucer.
(Offtopic: how cool would it be for a quest to utilise the moogle mail. Imagine after beating the CC queen, you have to wait a real life day and you will get a moogle mail from a mysterious NPC saying that the king is ready, with a key item attached to get into their private room in the gold saucer)

Thing is they could easily make it a grind and fun, just the choice of games are not. As one mentioned earlier near the end of FF7 I did the same thing, I spent HOURS at the gold saucer playing the bike game, snowboarding, the "Rock paper scissors" type fighting game (perhaps a 2 player version of that could be added?) and just goofing around. The only game I recall from there that we got is basketball, which I didn't like there and do not like here. Also I know someone has mentioned it before but why don't we have gambling of some form? Even PSO2 has a casino with Slots and Blackjack and that was entertaining to play and the casino serves the same purpose, glamour items and costumes. If this event was to introduce the new GATE they have planned, well I won't be doing this one either.
To be honest, I want another game like Cliffhanger mixed with Anyway the Wind blows. Let it play like MXC or Wipeout if anyone has seen that show. Basically just a giant guantlet of running, jumping, raising and lowering platforms kinda thing. Throw in some humor with different door choices that either kick you back to the start (say open the door, small animation of a bomb with /surprised) or let you progress to the next stage.
