NIN Came in the game later on, so I'm going to call that unique to MNK. NIN was sort of 'attatched' to all MNK gear pre-2.4. Although, it doesn't matter - in the end, MNK is still one of the ones worst off for unique gear because of their shared status with most classes in design. Attatching NIN to them will literally just bring MNK down to NIN's level.

There's a fault in your analysis.
(I'm going to talk about 3.X patches)
When caster and healer share gear. They share between 5 jobs, always.
Whenever a melee class shares melee gear can share with 2 - 3 or 4 jobs. It never shares between 5 jobs. Even tanks only need to share between 4 jobs. DRK, PLD, WAR and another melee class.
So even if we have shared less times in 2.X times. When it comes to 3.X series Caster healers are the classes that share with more jobs and all gear have been shared between healers/casters this 3.X patches (not counting Esoteric)
This is an interesting point. However, ask yourself this question:
Do you really want to have to gear all of your healers individually?
A melee dps right now ,has to choose between being one of the three. A tank is able to be whatever they want, and switch freely between the jobs using the gear they got. Same with healers. Same with casters. And now, Same with BRD/MCH. Do not look at it as "Jobs", but instead, look at it as "Armor Class"
MNK is a lightly armored (Cloth/leather? Little odd for me) Melee
DRG is a heavily armored (Chain) melee
NIN is the wildcard - they use DEX and not STR, but they're still a melee in some lighter gear. Not really sure how to classify them.
BRD and MCH is a medium-armored (leather) ranged
BLM and SMN is a lightly-0armored (Cloth) ranged
WHM, SCH, and AST are lightly-armored (Cloth) healers.
WAR, PLD, DRK are all heavily-armored tanks (Plate.)

What I want is Caster gear separate from Healer gear.
It would have been so much better having Shiva Caster gear and Phoenix Healer gear, but SE decided to be lazy again and giving 5 classes the same gear with a palette swap.

Thanks for the breakdown. Some of the numbers are slightly off, though (some of which you got before I finished up writing this).
Bard and Caster shared a model for Second Coil (one was red, the other purple). Tank's set for Syrcus Tower was completely unique and not shared with DRG or MNK (though their set was shared, yes). I'm with you on Void Ark: I don't consider the tank/DRG sets separate enough (the tank body still has the same basic look as the DRG body with its leg piece, so the overall aesthetic is nearly identical). But, it's debatable.
I think it's also probably worth it to consider unique dungeon skins, too (I'm sticking with the usual suffixes so I don't have to type stuff like WHM/SCH/AST/BLM/SMN, though a lot of the sets have unique names). Pre-50 dungeons aren't included since they typically follow the DoW/DoM model (though tanks do get one unique set here, the Cavalry Set).
i60 (Pharos Sirius): All sets were reskins
i70 (Lost City of Amdapor): Fending (reskin), Maiming/Striking, Aiming, Healing/Casting
i80 (Hullbreaker Isle): Fending/Maiming, Striking/Aiming, Healing/Casting
i90 (Snowcloak): re-used Myth gear, all unique
i100 (Keeper of the Lake): Fending, Maiming/Striking/Scouting, Aiming/Healing/Casting
i120 (Dusk Vigil): Fending/Maiming, Striking/Scouting/Aiming, Healing/Casting
i130 (Sohm Al): all used the same basic model with minor modifications
i136 (The Aery): Fending/Maiming, Striking/Scouting/Aiming, Healing/Casting
i142 (The Vault): Fending, Maiming/Striking/Scouting/Aiming, Healing/Casting
i148 (Great Gubal Library): all used the same basic model with minor modifications
i160 (Fractal/Neverreap): Fending, Maiming, Striking/Scouting, Aiming, Healing, Casting
i185 (Saint Mocianne's Arboretum): Fending/Maiming, Striking/Scouting/Aiming, Healing/Casting
Dungeons tend to have overall more shared sets, but there are a few unique ones here and there, which brings the tally to (with Gordias included, which you also added later):
Fending: 14
Aiming: 6
Maiming: 5
Healing: 4
Casting: 3
Striking: 2
Scouting: 0
The runaway winner is still Fending, obviously, which has more than twice the number of unique sets as the next highest, and seven times as many as the lowest (discounting NIN somewhat since they weren't around for as long). There are fewer unique Maiming sets than I had the the impression were unique, but they're still doing better than most of the other roles. Aiming is doing pretty well, too—they're in the best position after tanks.
Edit:
3.2 Tomestone Gear: Fending/Striking, Maiming, Scouting/Aiming, Healing/Casting
That brings the number of Maiming sets to par with the number of unique Aiming ones. I'm not entirely sure how the breakdown for Midas will go (as far as I can tell we haven't seen all of them yet). It looks like tanks get a unique set there from what we've seen (surprise, surprise). Raid sets normally don't have many unique sets (tank is really the only one who consistently gets them), so that won't change the overall pattern much, if I had to guess.
My general feeling, that it's usually Tank/Fending and then either Maiming or Aiming that gets the unique set generally holds true. Going by what we have now, Aiming and Maiing have one-and-a-half as many unique sets as Healers, twice as many as Casters, and three times as many as Striking.

Who cares. I don't even complain since Urth's Found DoM gear is shared.
Gotta love a fellow qo'te that's good with math and objectivity.
Fantastic, thank you for the additional breakdown and corrections. Yea - I got nailed on that SCOB one. As for the Sycrus tower, I might've been wrong on that one, and I appreciate the correction for it as well.
Even still, it's the same result even when you spread the search. MNK/NIN is truly the one that's the most neglected in terms of gear sets, Dragoon is favored for the Melee as far as the three melee goes (likely due to the heavier armor class, comparatively.) Casters and Healers could use a little love, but compared to some of the others they don't really have a place to complain. And Tanks are literally the best-off.
I'll go edit my original post to say that Alahara pointed that one out, to help avoid this being pointed out more.

Right. I mean, Casters and Healers are a bit better off than MNK/NIN, but they're also comparatively more popular than them (which makes sense, when you consider there are 5 jobs for those two roles and only 2 for Scouting/Striking), so I think that's why we see more folks talking about the Caster/Healer sharing so often. If I had to hazard a guess, Caster/Healer mains may also be more interested in glamour, slightly (not as a rule or anything, of course—I'm a NIN with a blog devoted to how pretty I think my character is), which may also make it a more common complaint.
Going forward, this is actually a tough nugget to crack if SE wants to introduce a little more parity. Some more Fending/Maiming sharing is a good start. But reducing the number of unique Aiming sets is a little trickier, as the most logical places to share for them after Scouting/Striking are Casting/Healing, which are all sets on the lower end of the totem pole, and they can't really do a ton of designs for Fending/Aiming (though I could imagine a couple). Granted, this all assumes they'll generally stick to one or two unique sets per array, of course. If I had my way, every gear class would have a unique set every time, but I think that's not likely to happen.
