I miscounted on Philosophy, which was 4, you're right (a pretty silly brain lapse since I listed the four sets correctly, I just failed kindergarten I guess). It doesn't look as bad when you throw in the other role sets, of course, but I was just thinking specifically of Tomestones since I had it in my head that Philosophy also had five (which would have made every role-specific, Tomestone-specific array have 5 for ARR), when it didn't.

Either way I still wish they'd give us 5 full sets more often, or at least rotate the role/job that gets the unique set a little more fairly. It's never been NIN and it's very rarely either caster or healer. Tank almost always gets a unique set, and then usually one of DRG, MNK or ranged gets it, in most cases.

Of course, ideally, we'd get 7 unique sets each time we got role-specific gear (Fending, Maiming, Striking, Scouting, Aiming, Healing, Casting—I listed them out again to made sure I counted right), but that's probably unrealistic. So I'd settle for 5, with more varied rotation regarding who gets the unique set. It'd be interesting to see a light, chainmail type set that was shared by both tank and NIN or DRG and NIN, for instance, or even something lightly armored for casters or healers that might share elements with NIN or MNK. Tank and MNK sharing a set this go 'round is at least novel (I believe this is the first time for that), and I'd like to see more combinations like that we haven't seen before.
