I'm just wondering, does SE plan on releasing quests for crafters in the Company, so crafters can earn rank and marks and get their own chocobos.

Most likely not since Yoshi P. decided to make crafters and gatherers secondary to battle/magic classes. Every crafters and gatherers need a war or magic class if they wish to advance in the game now.
