Just hit the node. You can't be hit. They stopped that at some point in 2.x. As long as you don't aggro it you can mine without sorry.

I deliberately aggro the mobs all the time, as a gatherer, and away from a node. I get spanked once, then they turn their attention to my rank 20 bird. While he proceeds to pound the crap out of these high ranking mobs, I just waltz off and hit the node, no stealth necessary. Then I'll go back and help my bird finish the mob off. Other people see this and skip stealth too, then often join in the fun. Revenge of the miners!

Interestingly enough, this tactic works for fishing too! I was fishing in the diadem once on one of the western island before I discovered the mob-less fishing areas in the east -- someone decided to try and be a jerk and tried to get a mob to blast area effect spells onto me while I was fishing for my pterodactyls. He would be flying just in front of me off the island to try and get the aoe to kill me -- he died midair instead while I was happily fishing away uninterrupted.
