Don't know if's a theme song, per say, but everytime I'm on my BLM and pull aggro, I mentally start singing "Kung Fu Fighting" but replace the lyrics like:

But in all seriousness, I tend to listen to various video game OSTs when playing FFXIV, and considering that a listen to a select few on repeat endlessly I've started thinking about FFXIV while listening to them elsewhere. Does that count? If so, then these would be my picks:

On-topic, though, I never gave a theme song for my character any consideration. I'll go through some of my favorite albums and OSTs and see what I come up with.
