There aren't that many females in FF that use two-handed swords. Most female sword-users use one-handed swords.

True, but to be fair, FF already has plenty of precedents for bringing in references to other media simply because a developer likes it. (E.g. There's a reason we have characters named Biggs and Wedge in most of the FF games.) If they can bring in names from outside sources, they could probably bring in a stance as well.

The entire discussion is academic, as whatever the "actual" source, most people familiar with it assume it's Saber's trademark pose. Memetics > Truth.
At any rate, statues of knights with broadswords have used this pose for a thousand years, as it's one of the few comfortable ways to pose with one for any length of time.
