1) The esoteric is pretty much the same as the "awoken" anima. I think with my job (PLD) the awoken weapon ends up being technically worse if you want to theorycraft it, but not significantly worse in any meaningful way (same weapon damage, strength, vit... the rest is fluff and either weapon is getting replaced with Thordan's 205 or the actual Anima as soon as possible). The actual anima will take significantly longer to get than either the esoteric or the awoken weapon. But save your esoterics and get the awoken sword if you think you want to work on a relic anyways; it's worth waiting an extra week and using esoterics on other stuff rather than wasting them.
If long grindy stuff really isn't your bag though, there's no outstanding reason to invest in the anima. The best weapons in the game will probably continue to come from raid content in the future, and the third best weapons will be /way/ faster to get than the anima-quest line and just as viable for everything (including getting a good weapon from challenging content rather than grindy content).
2) The Void Ark fending gear is pretty solid (no parry), and free. That said, your esoteric is almost certainly better once you up it to 210.
If you want anything more specific... both have 424 defense/magic defense, as well as 93 strength and 97 vitality. The Void Ark armor has 86 acc and 60 crit, while chaos has 86 parry and 60 acc. So technically the Void Arc Armor should be better at the 200 level. That comparison is meaningless though, because as soon as you get the esoteric you can up it to 210, and the extra str/vit/defense should outweigh you being stuck with some parry.
The upped cuirass will get you 456 defense/magic defense, 101 strength, 107 vitality, 94 parry, and 66 acc. Primary stats almost always win.
3) If I was starting with nothing, honestly, I'd just hop on the Void Ark train to get yourself free i200 stuff, and pick up 210 esoteric accessories. It's not the best way to min-max efficiency, but it's a good way to raise your item level fast on both character sides at once. In my view everything will end up at 210 anyways before too long, so you shouldn't stress the journey that much imo. I'd also consider doing the Diadem for more 210 gear you can get easily enough. I should check it out more myself.
