Eh, I imagine it's a huge budget thing, while of course it be neat to have it East Coast, SE NA is closer to Las Vegas which means it's easier to prepare beforehand compared to say, ok now everyone from Cali has to fly to NY and prepare for this. The best that can do is just have a presence at convention within the area because then it's not just about them but other games as well which means it's easier for them to setup a presence with little work compared to the work of making a Festival purely focused on XIV. FYI I'm from East Coast to but I can completely understand why they plan it where they do.

Comparing it to the location of the EU building to Germany it seems to be 1hr 30 min flight. (130-164 per person)

Compare that to Cali-NY 6hrs 30 mins, (427 per person) one way, you can see why they keep it in las vegas. Which from Cali to Las Vegas is about an hr flight.

And keep in mind, it's not just about the cost of flight, but also resources they would be using to put everything together, sending it to CA to NY would be a lot more costly than sending it from CA to Las Vegas.

They could do what Blizzard do and just host it in their home territory, leaving everyone else to travel there :P

It will purely be a cost / hosting convenience thing - I'm thinking the EU isn't in London this year because London is horrible for hosting things at a decent price. Hence why we will get two days this time.
Don't worry, as a poster above said, when you move somewhere else for whatever reason, they will move it to where you previously lived haha

North America Isn't a country, Maybe Toronto Canada. Both East and in Canada. And with the Canadian $ so low right now it would be a steal!!!
