I definitely think that Edmont is disappointed with his real sons, but you get the chance to encourage Artoirel to step it up. I think the real problem is Emmanellain, who has put in the least amount of work out of Edmont's "children".

I think Emmanellain's issue is that he doesn't share a talent for being a knight and combat that his brothers have. I read his mood as feeling his lacking. I'm guessing a good part of his disinterest in being a knight comes from him feeling his lack of courage and talent.
Maybe, we still don't know what is up with the last brother. I am wondering why heirs being left out.
