Nice work! Always love seeing game foods being replicated in real life.
You can also try bear as well, though the taste of bear varies from season to season.
For larger cuts, gator meat, ostrich, emu (though emu has a beefy taste so it would be a toss up between it and bison), and llama can be used and has sufficiently varied flavours. Smaller meats like pheasant, snake, and even turtle could be something to look at. Just ideas, though availability and pricing varies.
