Nice work! Always love seeing game foods being replicated in real life.

You can also try bear as well, though the taste of bear varies from season to season.

For larger cuts, gator meat, ostrich, emu (though emu has a beefy taste so it would be a toss up between it and bison), and llama can be used and has sufficiently varied flavours. Smaller meats like pheasant, snake, and even turtle could be something to look at. Just ideas, though availability and pricing varies.

Was thinking this myself, since it's another carnivorous animal.

would be an interesting substitute for Eft Tail. Availability could be a pain depending on where you live.

I’m still tuckered out after making that Sachertorte, so I thought I’d make myself a relaxing cup of tea. Mulled drinks are usually popular around wintertime, but when does it ever get cold in Ul’dah?
Actually nights in the desert are very cold doubly so if it's windy. To quote google:

The temperature in the desert can change drastically from day to night because the air is so dry that heat escapes rapidly at night. The daytime temperature averages 38°C while in some deserts it can get down to -4°C at night.
Warm AND cold drinks would be popular in Uh'dah depending on the time of the day.
