People say Macs are inferior to gaming for two reasons:

1) Said gaming-capable hardware is completely overpriced. You are essentially paying extra to do what everyone else does normally. If you are on a budget, any regular PC machine will outperform a price-equivalent Mac. Heck, some Laptops offer similar or more power than desktop Macs in a price-by-price comparison, without counting all the extra goodness that being mobile offers.

2) It is very well known that most companies don't bother porting or properly maintaining games on Mac. Going to Mac expecting all the companies to support you akin to going to Google+ and expecting everyone to swap from Facebook so you can still talk to your friends. Heck, that is a pretty good comparison: Google+ was probably much better than FB, but nobody was there, so nobody wanted to go there. Mac is the same issue (Except for the being better part), so gamers stay clear of Macs.

This is why Mac is inferior for gaming.
Neither of your claims are valid. The Apple Tax is about price point and not about performance. The second is argumentum ad populum, I don't care what the other companies are doing (although both WoW and D3 run just fine on OSX). A selling point of Heavensward was the OSX client, it's reasonable for people to expect similar performance on the same hardware regardless of the the operating system and graphics engine.
