For me, the goal posts have kept shifting as I reached my goals!

Clear T5? Done. T9? Not a chance with this little time to practice.
Kill Titan Ex? Done. Get his pony? Done. Get ALL the ponies? Missing Shiva, Ramuh and Nightmare.
Get Zeta? Done. Get ALL the Zetas? Lol no. Ain't nobody get time for ... What? Someone DID that?! o.O
Get everyone to 50? Done. Get all the relics? Done.
Glamour everyone? Almost, at a loss for a good Bard glamour, and my BLM needs a T9 drop to be perfect.
Gear everyone in Demon gear or better? Done. i110 weapons on everyone? Done. Shiva weapons on everyone? Almost there!
Lucis tool on a crafter? Done. On all crafters? Yeah nope.
Lucis tool on a gatherer? Keep missing the clock, so no.
3000 achievement points? Done. 3500 achievement points? Done. 4000! achievement points? DONE! Might hit 4200 before the expansion.
Chocobo racing? Need a better net connection to bother with it.
Triple Triad? 75/80 cards. Missing Cloud, Cecil, Warrior of Light, Firion, and Zidane.
Minions? Still missing Puff of Darkness and Onion Knight, but I am so sick and tired of those two raids it's not worth it anymore. Other minions scattered here and there also missing.

Considering I started not even a year ago I feel I'm pretty up to date on all the things that interest me.

Oookay one week left. I got side tracked from the MSQ gearing up and doing new dungeons and trials. Honestly I'm having so much that I'm not really stressing over getting the MSQ finished before the 19th anymore... though I would very much prefer to get it done by then lol. I actually ran a few Garuda EXs to see if I could get the pretty pony and somehow managed to do so the first time it dropped for me which is still an epic shock for me! I absolutely love her (yes, my pony is a female lol) and the epic music she plays. I really want to collect them all now. It was so exciting!

Though it did bring attention that my ping of 80-120 is kinda too high - even with WTFast. I'd clearly dodge floor AoEs or go into the green barrier with time to spare, only to still die. I've gotta figure something out. >_>

I tried to get Moogle EX done as well, but the group I was in disbanded after three tries. The music in the place was amazing though and I really hope they add a mount for it in the future with the same song.

So I guess my goals are to:
Finnish the MSQ
Try to complete all trials, dungeons and primal fights
Try not to be get distracted farming ponies... I only have a week. ;___; It can wait I suppose, especially because I think I already have my favorite of the bunch anyway.

BLM: Soldiery set complete (including weapon) and upgraded to i110. Relic weapon upgraded to at i90.

SMN: Soldiery set complete (including weapon) and upgraded to i110. Relic weapon upgraded to at i90.

BRD: Soldiery set complete (including weapon) and upgraded to i110. Relic weapon upgraded to at i90.

NIN: Poetic armor set complete. Soldiery weapon aquired , upgraded to i110 . Relic weapon upgraded to at i90.

WAR: Soldiery set complete (including weapon) and upgraded to i110. Relic weapon upgraded to at i90.

Cross-class skills for NIN, WAR and BRD: Pugilist at 42, Lancer at 34, Gladiator at 22.

P.S. I want to mention that I find the monk armor sets fugly so I did not want to get the soldiery armor set for my ninja since it's the original monk armor set that ninja can wear as well, so I decided to get instead the poetic ninja armor set instead. And I'm really happy about my decision because it looks really cool.

@Miya, 80-120 isn't awful and the server for NA/EU is in Canada, east. I'm not getting any better from west coast and I manage to dodge primals' aoes np when they render(crap pc problem).
