there are more, total number of minions you can collect in 2.0 serie are 115, however it is only possible to collect 114 atm because the dalamud code is no longer active

short answer you can't,

long answer, it was a bonus for pre-ordering 2.0 which has long since ended your last chance to do this was with the ps4 version of the game, do not fret however you can get Kain minion from pre-ordering heavensward

So there are at least 2 permanently missable minions and 2 mounts at the moment.

mounts no, the Courl and fat chocobo can be gained by upgrading your A realm Reborn account (you may miss it when heavens ward is released however)

currently the only missable minions are Cait sith (pre-order bonus) and Wind up Dalamud (2 year chance to get that ended at the end of last year)

and soon Wind-up bahamut will be missable (it's 2 year code run ends this year dec 31st)

The mounts he's referring to are the Legacy Chocobo and the Legacy Gobbue that you could only obtain after reaching level 20 in 1.4 patch I think it was?

What about Shantotto, or golem, or snowman, or Thancred, or Minfilia? You can't get them now. Unless they'll repeat special events or add these items to the cash shop later.

Shantotto and the golem minion have been obtainable twice, so most think they'll release it again. You have a point on the Scion minions... I have a feeling next year will be something new.
