I think Ultima's theme works better with Nightmare than Kirin; I mean, it has the ifrit+garuda+titan thing going on, just like Ultima did.

As for Kirin, I still like my idea of the Ru'Aun Gardens theme from FFXI as a callback to the "Sky" region (where Kirin was the ultimate foe). This game has stolen music from FFXI before (the Shantotto battle theme during her relevant FATE, for instance) so why not another?
