P.S. I know you can re-watch cutscenes in your inn room, but you cannot re-read NPC dialogue that is not cutscene related, so :\

This might not be ideal but XIVDB dot com has all the quest text archived, so you can search for a particular quest and select the dialogue tab to read everything NPCs said.
