I haven't bothered with 90% of the coils. I've only cleared T1, T4 and T5. I only got around to clearing T1 because some friends wanted to help get people through it as a spur of the moment thing, we were all geared i90-i110 about that point in time and the echo buff had been in place for a little bit. I've since cleared it before and it's laughably easy nowadays. Cleared T4 because of Nexus light farming, lol. And a month or so ago finally got a T5 clear because some coil selling group was shouting they were giving out free wins, so I figured why not. I had tried it before but only got to conflag stage (yay DF lolz..), I read up on it and watched a video to prepare a bit. Even though I was being ran through it I still wanted to participate. Died once on twisters because it wasn't quite what I expected, but after I got raised I stayed through to the end. Don't really see a need to beat it other than story completion and I have no ability to join statics because my work schedule is never the same. I would like to have it completed, maybe someday.
Tried PVP on it's initial launch, played about 3 or 4 matches and haven't touched it since.
Only other content I haven't and probably won't ever get into is endgame gathering and crafting. Materia is too damn expensive to be melding and overmelding, and spiritbonding is too time consuming.
I haven't really gotten too into chocobo racing/raising but I have done a few races and I find it quite a lot of fun. Triple Triad on the other hand I haven't really been enjoying but I guess it's because I don't have a good amount of cards yet.
When I played FF8 I loved Triple Triad in fact I actually stopped playing the game because I missed out on a npc that had a card I wanted and I had saved over the file before I realized my error. I was so good at that Triple Triad, but it was easier because there weren't any card restrictions. I think if they didn't have the restrictions I would definitely enjoy Triple Triad more, but only being able to use 1 rare card until I have 30 total cards is not fun. I don't understand the point of getting good cards only to not be able to use them with your other nice cards until you meet a specific total of cards when all you need is 5 in hand. It's a rather pointless and annoying restriction that makes the game that I enjoyed not nearly as fun. I mean, if I have cards in my hand in reality I will pick my best cards to play so that I have the highest chance of winning as possible. That's just natural. But no I have to be some card collecting master before I can even play 5 good cards (if that's even possible in the game, idk).
The rest of the gold saucer I do enjoy and I think that's it for content I don't really do.
Edit: Oh, I had almost forgotten about the Sight Seeing Log until I read the guy above me. I was big into trying to do it when it first came out, but it's just not a fun thing. Having to wait for specific times and weather before you can complete the log even if you know where to go. Horrible implementation of something that was a pretty amazing concept and should have been fun and enjoyable. It's not.
To elaborate, I enjoyed the riddles actually. Also to the guy above me, there are resources out there that tell you where each location is. The problem is that they require specific weather at a specific time in the Eorzean day and that is frustrating to no end.

I also forgot that I actually haven't gotten to beating the all of the EX primals. I still need to beat Leviathan EX and all the other's that have come after him. Meh. There's honestly isn't much of a reason to do so unless you want to farm for elemental mounts/horses.

Extreme primals. They've never been a pressing thing to me. I'm just not that interested in them. I want to do them just to get them done and say I did them, not because I want to do them.
Sightseeing log. Want the apkallu, don't care enough.
Coil. Really want to do it for the story, but too much anxiety to get through the mechanics...One mistake, one wipe, and I'm too scared of messing up and ruining it for everyone again.
I get pangs of "I'm a lazy player who doesn't do anything" over not doing Coil or EX primals occasionally. v.v

Beasman Tribes - not a fan of content that has time gates for no good reason.
PVP - extremely pointless in this game as there's zero open world pvp and no sort of tournament ranking system to see where you stack up as a player.
Daily Roulettes - I haven't unlocked expert roulette since Brayflox HM was the "it" thing to do. I strongly dislike dailies and dungeons so these will continue to go ignored until they're required. I don't need this crap to cap a measly 450 poetry each week.
Fishing - I don't technically hate fishing, I just feel like it has no point. I can simply just wait for someone to fish up what I want and buy it. Gil is far too easy to come by in this game.
I want to PvP, but the queues are so long.
I'm not into crafting or fishing.
PvP and sightseeing had not been touched since I activated them. I'll probably do them at some point but no interest right now. You could probably add desynth on that list too. I'll do desynth before I start the other 2 though.
I often forget the sight-seeing log exists.
Beast Tribe quests. I hate the idea of dailies, and the rewards are so minimal to me it isn't worth it. Ixal is nice, but I have all of my crafters to 50 before then. I just can't bring myself to log in every day and "siigh time to do the same 6 quests I do every day".
