Actually (and you'll find this SO much faster than the approach it sounds like you have in mind)- you can do battle in Gatherer Gear/Crafter Gear out in open world or a spiritbond party, and you should end up with Crafting/Gathering materia based on gear type. That's why people get upset in some forum threads about people spiritbonding in dungeons when they show up with half their outfit as Gathering/Perception/GP gear in a dungeon run where it impacts the team's performance... but when it comes to spiritbonding out in open world, you just need to make sure you can do enough DPS/Heals etc to survive against enemies at the level of the gear you're spiritbonding, especially if joining a spiritbonding party. It's not that hard with a high level weapon and a couple of high level equipment left side pieces for your class, and the rest be gatherer/crafter gear.
That's why Urth's Fount is popular for this, you've got lvl 50 enemies there you can easily and repeatedly AOE down with a few people. HQ gear spiritbonds faster and melded gear spiritbonds faster so I equipped a HQ Raptorskin Jerkin (Lvl 48 Gatherer gear), HQ Raptorskin Rings, etc I'd crafted for this purpose into a gearset I saved as my spiritbond loadout. And I melded a LVL 1 GP + 1 materia to each of them since they're super cheap and I heard it's better to stick with materia related to the type of gear you're trying to spiritbond. It surprised me how fast my outfit spiritbonded, got several materias that sell for 150k+ each on my server for half an hour's effort when I needed some for my forager's gear.
In my case I wanted Gathering materia itself. But the reason going this way could be more time and cost effective is that there is only Gathering materia applicable to 3 different stats- GP, Perception, Gathering- but tons of outcomes are possible with DoM/DoW stats and if you don't get the CRIT/DET materia you want you'll get something worth less... or elemental materia. So it's less risky you'd be doing it for junk materia. Like the posters above said. I would compare the prices of gathering and crafting materia on your server and if one is a lot more than the other, that's the kind you want to generate.
And if you're going to spiritbond gear for materia to sell- to raise gil to buy the materia you want- who has the most money to spend? High level crafters and gatherers who have a significant need for materia to boost their stats.
