The Ironworks chest and legs are easily the best pieces for NIN in the game. Avoid purchasing the head, wrist, and earrings. The rest of the pieces are pretty good filler until you get your hands on Dreadwyrm or crafted i110 (with maximized melds). Also, skill speed is pretty much a stat you want to avoid in most cases. Stack Determination and Crit while trying to reach an accuracy amount of 535.

Head is actually crucial to reaching the 441 Skillspeed point that lets you get an extra GCD inside every trick attack. So much worth.

It honestly comes down to how you mix and match gear.

Here is my current set-up (add risotto at the bottom if you like).

All iron-works on left side. I do have a surplus of accuracy for now, but waiting on the dread bracelet and ring to drop, then switching to lavatoad legs.

On the i125 Sasuke Blades, I'm did T11 at 500-520DPS (I'm not the best, but I'm cool with those numbers). Just upgraded to my Zeta this morning (did 580-600DPS on a dummy for 4:34secs before TP starvation, hoping for 550ish in actual raids)

Mu setup is in no way "bis," but I personally went this route because any upgrade is better than none while praying for dread drops, and I'm not keen on spending tons of gil on pentamelded gear with lower primary stats, but that's just me.
