Do new players miss out on certain things that vets got to experience?

There is a nerf SE added called Echo
Which is basically a buff for players who suck. And unfortunately you are not gonna get to see the old content when it was hard because most people are overgeared and the echo buff.

This is a matter of opinion.
There's a buff to players called Echo that makes doing old, outdated content that gates newer content that people are actually doing easier for players, as well as taking gear out of the equation and allowing players to focus instead on mastering the mechanics of the fight rather than worrying about their stats.

I would definitely say new players don't get to experience the same content in the same way veterans did.

New player's skill curve is much more inclined because of how the Hard Modes go, I heard Garuda Extreme is a damned mess now...

I wonder why... Garuda HM dies without even rotating...

It actually hurts me whenever I roulette and I see a soldiery bonus.

Uhhhhh....yes you can, click off the echo buff. Problem solved.

And judging by your join date, you've only seen the echo buff, so you must be one of those 'players that suck' huh?
Seriously no reason to degrade people because they need some help.

The only real difference is in the difficulty of the trials and how long it takes to move past them.

As mentioned, it's pretty painful to watch people steamroll Garuda HM before her mechanics even shift. As for Echo, people moan everytime it happens, but the top trials of the current update are always difficult enough to last the vast majority of FFXIV's population. Echo still really doesn't do anything for fights with unforgiving mechanics like Titan, and people will wipe Twintiana to death and back regardless of how fast the phases shift.

On one hand, it's kind of sad for fights like the HM primals to be reduced to a zerg rush for newcomers, but on the other hand, Thornmarch EX, Leviathian, Ramuh, Shiva and T6-13 did not exist when I was that level, and although they now have echo as well they're still completely unique fights.

They might bring it back one more time whenever Lightning Returns releases on PC.

It must come back so I can get special LVL13 daggers for my RGE/NIN (who would they have modeled them after anyway?)

Also, OP. LoTA is gonna be tough, Q times are pretty bad atm for that, at least on Behemoth. ST is soon to follow.

The only thing i guess u can say that u actually missed out on is when every ran around looking like their actual jobs
(I.e whms wearing the iconic whm robe, drgns tht actually have drgn like armour, plds looking all knight like etc )
Everyone's job was so easy to distuingish. But now the new gear from coil, tomes, raids, crafting make ppl look like clowns, cyborgs, allagan furniture and stuff u "can't even".
And then there's glamour....
At least we'll get another chance in 3.0 before we all go magitek mode power rangers again.

All of the gear on this game looks amazing, in a general sense. I see more people wearing their appropriate gear than glamour stuff in this game

All you've really missed that you can't experience again in some shape or form is the end of the world and all the other pre-2.0 events. All the other events are either available in an altered form (nerfs to dungeons) or will come around agains (seasonal events). They won't be exactly the same but the flavour, as it were, is there.

(also, Lightning/Shanttoto will probably return again)
