Can't we get some decent looking Katanas/Daggers?

Tanto were never really intended for combat use, but were often carried to be used when performing seppuku, although sometimes a wakizashi gripped by the blade would also be used.

Also while katana were more commonly used in a two-handed fashion, especially during duels, there were a number of fencing schools that taught one-handed katana use or dual-wielding with both katana and wakizashi, so they are not exclusively a two-handed sword like say a claymore or flamberge is.

But to the original post, I personally feel like there are a good number of dagger/weapon variants for NIN/ROGm just as much as any other class/job really. It just seems that there aren't enough variations of the specific style that you want, and while I get the argument that ninja should have more "ninja looking" weapon options, it is that style that set the relic apart and makes it special. That and I am sure there will be some more variations to suit your tastes eventually.
