So, there are moments during many fights where healers just stand there doing nothing, Stoneskin has a really long cast and cost a lot of MP and it's not that useful.

Exactly. In a situational setting, SS can be great, like SSing a ranged DPS before a fireball in T7 or for allagan field, or a Mountain Buster [insert other examples here], but randomly casting stoneskin because you have nothing better to do at the moment just gives the illusion of being useful, and is mostly a waste of time and MP that could be used for other things.
