I've seen RPers in Gilgamesh, but no where near as many as there were back at launch. There was almost always a group RPing in one of the Adventurer's Guilds, but now I rarely see any. Still, they do have a presence if you can find a good groupGilgamesh is, Unfortunately, more 'clique-based' and 'event-based' Roleplay, when I was on that server 4 months ago. You would be hard-pressed to find open-RP, so much as you'd find people who RP with their FC and behind-closed-doors.
Balmung has been great, though, but tends to be more 'open-Tavern RP.' I don't find many people on the world map RP'ing openly, unfortunately, but I imagine if I tried to initiate with someone who has an RP-tag, I'd have an easy time of it.

A good roleplayer generally will not approach a non-roleplayer at all. Typically, the only time you'll see roleplayers at work at all is if they happen to be writing their dialogue in /say, and even then only other roleplayers are the intended audience. On a noral server? Never seen it.. Really don't want to. In my 15-16 years of playing MMOs I had 1 roleplayer approach me ever. On EQ outside of Riverwale in the Misty Thicket. He asked me my name. At which point I looked at my screen like he was a crazy person and asked if he could read.
Roleplayers that try to impose their stories on non-roleplayers, like a PLD who enters a Duty Finder dungeon and refuses to wear a shield for roleplaying reasons or something are rude roleplayers, and their behaviors are not respected or endorsed by other roleplayers.
What is role playing? I don't understand i hear it from time to time but i never understood what it is.

Balmung is pretty much THE unofficial RP server. I sometimes have to put my chat to FC only to avoid being flooded with some overly long complex backstory or single custom emote. I can't compare it with Gilgamesh for which one is better, but RP FCs are everywhere on Balmung. I don't RP, but I know some who do and see RPers on a minute-basis. They are EVERYWHERE. Like RP? Come to Balmung!
I myself do not RP anymore, but the people are more pleasant in general in my opinion.

its pretty much like story telling!
with your characters and the world and lore. you become your character and act like them.
you can pick your own story and personailty for your character n stuff like that.
i only do light RP nowadays and dont RP on this game coz the lore confuses me lol
here an example
-Shizuka hugs kosmos;
though usually in heavy RP and stuff people actually take the time right more in detail n stuff. XD

Right now there are a ton of players RPing as douchebags, they seem to show up when a hunt mark spawns.

There's also the option of starting your own RP FC or LS if you don't want to transfer servers. There are roleplayers on every server (I know some personally, and have met others on Siren), some more than others, you just have to know where to look. Starting your own FC/LS is a good place to start.
As is said in Field of Dreams, "If you build it, they will come."

D&D or being an actor in a play.
"This armor was handed down to me from my grandfather Bishoran the Mighty a powerful highlander warrior who died in the battle of Highwind Pass"
^ That kinda thing
