I prefer being able to use the Protect ability on any class/job, since I have leveled a conjurer.

That's not the point we're making. The point is; why are you, with all classes and jobs unlocked, unable to cast protect on yourself?
Having an opinion does not make you right or wrong, it simply means you have an opinion. Don't get irritated when people don't agree.
Why? Because the Job I use cannot use Protect. Is that a Design flaw? No, It's because MNK cannot use CNJ abilities, Which is perfectly fine. I already posted in the OP Will SE let us keep buff when we change jobs? Probably not, But I assume it would be far easier to add a Protect Scroll than to keep buff when changing.
Protect isn't so useful that this needs to be a thing.
Read.
If you switch to Conjurer, cast Protect, and then switch to another class, THE PROTECT BUFF WEARS OFF.
You can't use it as a cross class skill BECAUSE NOT ALL CLASSES CAN USE PROTECT.
Protect is a 15% increase to defense (+mdef with trait), which translates to about 4-5% mitigation at best, and that's for a tank, it's even less for other jobs. It's less powerful than Foresight is for a Warrior.
Overlooked that sorry.
But since we're talking about damage mitigation, Monks have a stance for that don't they?

I don't see anything wrong with this.
just a convenience thing right? i wouldn't mind this for when i'm running around on dragoon or bard.
The question is. Is it worth to use GC seals to shave off ~5% damage from the already miniscule damage overworld mobs do to you?
