It's very clearly a ronso.
I can tell by is masculine figure and Ronso racial features just look at that horn!.

But it in all seriousness it would seem that the ears are a little too low down for a rabbit, but I could be wrong.
Just hope its something completely different from what we have now.
Sadly thats what Yoshida wanted. Some sort of beastmen race or non-human, simply to create more of a variety (as most MMORPGs would offer)

The player character is stand-alone in the Hildibrand quests. I don't see why the fight with Gilgamesh would be any different. If Gilgamesh had been introduced as someone who assaults groups of warriors and steals their weapons, then we can justify it as a group fight.
Instead he's doing one-on-one duels and winning. It'd make sense for the player character put an end to Gilgamesh's winning streak one-on-one.
The Screen shots of the fight showed at least 3 characters fighting Gilgamesh. Its at least a 4 man instance fight.
Nope scratch that, could be an 8 man raid. I see a White Mage, Paladin, Dragoon, a summoner can be seen in the background between Gil's legs and there appears to be a Marauder above the chicken (kinda looks like he's riding the chicken lol.) So 2 Tanks, 2 DPS visible and a healer, 5 members of an 8 person raid.
I don't think she denotes a new class. Her clothes are quite interesting, but like a lot of NPCs I don't see a class associated with it. You can't really tell what Millfina is by looking at her clothes. Could be a new Class for the expansion, but at the same time it can also just be vanity clothing with an oriental style just to give us more styles to use with the Glamour system.
My thoughts, I won't rule out those are ears, though I agree they are too low to be Bunny Ears, Even with them lopped down, the base of the ear should still be at the top of the head and not at the same location as a human's ear as the hood dictates. It could be down turned ears of a race that has their ears coming out from the sides. I remember a cartoon with a character similar but don't recall the name. Could be horns or tendrils as well, but I can see them as ears, just not specifically a Bunny's ears.
From left to right: Paladin, Summoner, Dragoon, White Mage, Black Mage, and Warrior. The Summoner can be seen easily between Gilgamesh's legs, the Black Mage can be spotted by looking for the obvious glow of the Stardust Rod Zenith, and the Warrior is right beside the Black Mage (identified by the WAR i90 gear and the faint glow of the Bravura Zenith).Nope scratch that, could be an 8 man raid. Didn't Yoshi mention something about a Dragon race at one point too since the game was supposed to have a huge dragon component later on when we got access to the Garlean Empire?

You do it a number of times with other bosses. Why should this be any different? Look at the number of FATEs where you have to have many Adventurers gang up on a single enemy. Gilgamesh is usually the same as the Summons so he could be a wandering Primal similar to Odin. He has a lot of power based solely on history and general FF view of the characters with the name. To expect anything less is diminishing the character and namesake. Its not that the Warriors of light are weak, its that Gilgamesh is powerful that you'd need a party.
