This, right here, is the correct answer. The game's targeting is dependent on your camera angle and then, from that angle, chooses what the system thinks is the closest target from the way your character is facing. It's a stupid way to do it, and it's been refined since beta where it was a travesty, but you can manipulate what you target by rotating your camera.
So yes, it is the system causing the problems more than the player, but once you know this, it makes it much easier and you'll never miss a fruit unless a party member snatches it out from under you. Because of the way the fight works, the tank should never not be by a fruit because of how the boss moves.
