Besides helping make spirit bonding a quicker experience, is there any real purpose to using elemental materia? Of course I don't expect it to be as important as Savage Aim, for example, but is there ever really a point to having elemental resistance materia affixed to crafted hear?
Currently, no not really. Think of it as playing the Russian Roulltte of spirit-bonding.
"Aw balls, got Ice IV again.."
Luckily you can use this materia to speed-up the spirit-bonding process. (Items with materia bond quicker)

That's what my idea of it is. I am more or less wondering if anyone in the community has any insight as to whether elemental materia has (or will have in the future) any significant purpose other than what I currently understand.
What I do know is converting i70 gear into Fire IV is quite depressing.

Well hopefully down the road we can get unique stats and an elemental wheel, not like a little complexity would hurt after all most FF fans are use to SOME wheel. It'd be nice to have a real elemental wheel and then something for the piercing/blunt/slashing they added in 2.0. But this probably wouldn't happen till 2nd or 3rd expansion (current things being a ground work), kinda sad Pokemon has such an in depth system and it's for "kids."That's what my idea of it is.
