You say that, but Yoshida stated frequently that "<Insert Topic Here> will be discussed at a later time." and that there would be much more in the second half. So... ANYWAY, BACK ON TOPIC!
The feel I get from FFXIV's Golden Saucer would be that it's a casino, plain and simple. That'd mean:
Card Game: There's no way Triple Triad or Tetra Master would be the card game of choice, as both are collectible card games that have no place in a casino setting. They'll either put in well-known real-life card games (Hold 'em Poker, Blackjack, Baccarat, etc.) or add in card games exclusive to Final Fantasy (Chronobind or another made-up card game that uses a standard deck of playing cards).
Race Game: I have a theory chocobo racing of any kind will either be "bets only" or completely excluded until patch 2.4, when the Chocobo Stables will be released. Having actual chocobo racing at this stage where every chocobo is literally the same just seems silly and pointless.
Snowboarding: This was mentioned and I am interested in seeing how it develops.
