Your chocobo basically gets 25% of your experience (reducing what you get), so the more the monsters give you, the faster he'll level. But it's never at a fast rate. As Urthdigger mentioned, the best thing to do is to use it at any chance you get, especially during beastmen dailies and solo treasure hunting.

If you're out in the field, not waiting on the duty finder and not in a party, then your chocobo should be out and gaining experience.

I don't think that's quite right. Comparing my xp to hers, it appears we get the same xp (Although I get the armory, rested, and food bonuses and she does not). While there is a reduction in xp, I imagine that's because we're technically in a 2-man party, which does somewhat reduce xp gain.
