It isn't that it is Christmas Eve, it is because it is a holiday. A holiday that a lot of people don't have to work or go to school or other things. That is the part that gets annoying, weekend and holiday maintenance really eat up the free time casual players have.
Zomg 3 hours gameplay lost, let me quit today over something I agreed to in the EULA.
As opposed to, say, WoW which goes from 3:00 - 11:00am PST once a week? Really, I'd say XIV has less, which is impressive for a launch title.
It hurts a little bit for PST, but it's a relatively unobtrusive time slot for the most part. Moreover, they just launched a patch - having more frequent maintenance rounds afterwards is bound to happen. They'll settle down to a once-a-week schedule pretty soon, I'd imagine.
Either way, the reason they're taking the game offline on Christmas Eve is that most people are in bed or spending time with their families on tonight in particular. It's arguably the least problematic evening of the week. They also chose it despite the fact that it forces some of their employees to work on Christmas Eve, so I think it's rather clear that they had compelling reason to think this was the best choice this week.
My family is thousands of miles away, and most of them are deceased. Not everyone has a family. Not everyone has your life. For someone who has the audacity to think themselves on who understands the nature of Christmas, you sure are a real fucking prick about it. There are nearly a dozen or more reasons why someone would want to spend time in this game. For some, their only friends and family play in this game. They connect in the mmo, they smile and greet each other. I spent Xmas of 2007 in Iraq, in a showbox of a tin cage that was my room. I was alone, an empty bunk above me and most of my friends sleeping. I had a satellite hooked up with foil on the wire to get better reception, and 1700ms latency to World of Warcraft, and I got to spend Xmas eve with my best friend back at home and my girlfriend waiting for me. You don't tell people how to spend their Xmas. For some, the people in this game ARE their family. Judge them on your own time, oh and happy fucking holidays.

crap i finally have a work day off and there's maintenance. and no, people still living with their parents need not tell me what i can and not whine about.
This, I work a lot of 10 hour shifts and when the holidays roll around I get a few days off and I'm stoked to play and catch up, buuutt I can't because every Holiday it's maintenance.....along with 3 other days out the week. I don't mind maintenance, I don't even mind the time honestly. It's just multiple times a week, it's highly annoying. Maintenance has never bothered me except for in this game because it's almost every other day.
Is it really? I have no clue when the scheduled maintenance is, because it's maintenance multiple times a week!

Yeah, it's terrible to have fixes, sure.
I feel sorry for the folks who are working in such harsh schedule for some individuals here.
