Playing with a Warrior tank is 'normal mode' because that's how the game was balanced; around Warrior tanks. Deliberately choosing to use 2 Paladins in order to circumvent or ignore game mechanics is 'easy mode' because it is a good bit easier than doing it with those mechanics still in place. The mechanics might still be there, but it is significantly more difficult to beat the fights the way they were intended, rather than just abusing PLD cooldowns to ignore mechanics.

By "abusing" you mean "using them at all," right?

That's like playing an FPS balanced around a pistol and saying it's "easy mode" to use the machine gun the game hands you. . .
