Ridiculous hyperbole. I'd hardly call having a few stats less overall "gimped".
Food = very slight advantage. That slightness might matter in Coil, but anywhere elese it's negligible.
Advantages are advantages, raiders want every advantage they have.
In world of warcraft Flasks are mandatory to raid, they only provide about a 5% buff to damage, or for tanks they provide a tiny (around 3% total) hp increase.
Hardly important by your standards, yet MANDATORY.
This game did something truly great just now. They made Cooks a real job.

We are currently working on adjustments for patch 2.1 to make it so food effects do not wear off when you are KOed.
We understand that there have been a lot of feedback asking for longer effect durations or higher stats when considering the materials needed for high level recipes, but we’d first like to monitor the situation with the planned adjustments.
Apparently not anymore.
When food starts to persist through death, there will be a HARD CAP of food being used per a set amount of time. 1 food item per 1 player per 30 minutes. Seems so similar to the weekly myth cap. Once every player willing to use food does so, there is no reason for them to buy any more untill the ones they have wears off. Food market freezes for set time, crafters start to spam undercutting just like the RMT does. Not-best food will stop selling AT ALL.
Now its usually one food per wipe. Food market is defined by ppl wanting that slight boost for each wipe. Weaker when u have less success chance, stronger when success chance is higher.
Therefore instead of not removing the food buff on death, its duration should be reduced by set time per death, 5 minutes seems like a good idea.
There shouldn't be any adjustments to material costs, however I think the 2-star food should have their %s buffed, at least to match that of lv45-49 food that gives the same effect. It makes no sense for 2-star food to give a LOWER buff percentage. On a full DL w/Relic monk, deviled eggs give better buffs than apkallu omelettes. You'd need like 600+ crit for the apkallu omelette to have a greater effect.
Letting food last after being downed will greatly increase the demand of food, though it will greatly cut the value, as well. Hopefully it will all even out in the end, but as a Culinarian, I am glad.

I don't understand why people think this won't make food more profitable when in all other MMOs(if you cared to look outside of Final Fantasy anything for just a minute), many of the economies thrive on consumables. I don't know if you've looked at wineport at ANY TIME of the day or night, but it's packed no matter what server you're on. Only a couple of those groups raid for 1hr and clear through turn 5. You have to think of all the other groups progressing still which takes up multiple days at 2 to 4 hour intervals. That's a lot of food to be consumed PER DAY. Also once the majority of the rest of the community realize food is a great "extra slot", food of all levels will start selling. You guys are shooting this down, thinking about yourself, before you could even see what good this could do.
Also, realistically, in order for that food to exit my body after every death... I must of had a bowel movement upon every death too... and that's just gross. 30 minutes seems like enough time to digest ^^.
