Allowing people to buy any amount they want from large stacks would ruin bulk discounts and drive the price of items into the ground.

Person A: selling a stack of 99 ingots for 150 gil a piece
Person B: selling individual ingots at 275 gil

Both people have a viable strategy with this system because they are targeting different buyers. If you allow people to buy 1 ingot at a time from that 99 stack nobody would ever buy ANYTHING except the absolute cheapest stack up.

This means as a seller you have to babysit your items and continuously undercut people if you want any hope of selling. Everyone would immediately begin a race to the bottom.
