You went down the list of things to do, and called them boring, stressful, or both.
Maybe it's time to go farm some dailies in the other MMO? At least you haven't had to pay for a subscription yet.

Everyone saying that MMO's may not be for him. There are plenty of MMO's that offer more to do than grinding tomes. OP you need to find you a good sandbox game, sounds like your looking for an open world game to fart around in. You might like EVE, no grinding necessary can buy currency for your ships from CCP.
Would be nice if this game launched with more than 1 lvl 50 4 man dungeon worth running. That's kinda cheap if you ask me.
The game will expand so more content will be available. But you basically said you don't like MMOs.
The most rewarding thing for me is doing lower level dungeons to help friends out. Being a tank I party with them and use Duty Finder for instant parties to save them waiting. Show the party how the dungeon is done and let them roll on all the gear
I also try to chat to the party during CM and AK runs as they can be tedious!
Find something else to do then. No one is stopping you playing other games. Play a load of games/do other stuff until you get the urge to come back and see if you feel different.
There's no reason you cant play any given MMO like a sandbox game. I think OP just finds MMO's boring. If he could simply fart around and have fun, he could do that here. Fact of the matter is that MMO's are just not suitable for most ppl. Its a game you can never "finish", thus that satisfaction that you'd typically get from every other game does not exist. Put 50 hours into a console RPG and you probably feel great. Put 50 hours into an MMO and what?? It doesnt end. You play until you get bored, or you "sandbox" it and just fart around with online friends.Everyone saying that MMO's may not be for him. So...how'd Primal Hard fights and The Binding Coil go for you?
Main problem is that when a game like this needs a sub, I generally feel I have to log on frequently to justify the cost. Sure it's not much money but then again I am sort of used to other mmos where the more successful ones usually offer a variety of things to do once level capped. Ones that don't have always failed. Patch 2.1 may offer more but that's months from now? Can anyone honestly say they will love running AK every day for that long since that's about it in PvE content atm? Already tired of the place after 100 runs now, like to the point I hate it.
W/e. If there is a way to put my sub on hold, then I will do so and go back to mucking around in GW2 until 2.1 saves the day...maybe......

Brah the games been out a Month brah. Brah a Month.
Actually I already got billed. Got my free 30 days back in 1.0. As for Sandbox there are three different ones that show some innovation to gameplay and not a dime a dozen standard set of what to do. I love mmo's. Just a few years back most games kept me busy for months. I do plan on waiting, like I said, for the update before finalizing. As for rright now I dug out Rage and spending time blowing up mutants.
