Leveling is meant to be easy considering the game expects you to level multiple classes. If they made it harder to level then nobody would want to level alt classes because of the grind and people will complain about that instead.
As for end-game content, that's what patches and expansions are for. Yoshida specifically said patches like 2.1 and onward are designed to build up end-game content while rebalancing existing ones, just like how all other MMOs work. Unfortunately, you're always going to have people who simply get burned out because they're so focused on pushing as far as they can with their main class they find themselves at the top of the proverbial mountain with nothing left to do but farm tomestones. Nothing wrong with that playstyle although I think XIV sort of half expects you to go level something else when you run out of things to do with your main.
