    No, stoneskin only last few secs for GLD because mobs will keep hitting you constant. In my opinion, it is not worth getting to trouble to get stoneskin because what i heard from people u cant use it in battle.

    I don't know if it's different for PLDs but I've seen healers use Stoneskin many times in battle. Assuming he can cast it, using it during brief moments where there's no damage sources could provide a nice buffer to your HP assuming the healer doesn't reapply it. Plus it generates no enmity (as far as I can tell).
