This. I was actually just thinking about the topic this thread is on the other day. I just hit 50 for the first time, and it hit me that if I want to continue making my lvl 50 better, the only way to do that is this scenario you're talking about - dungeon ad nauseum. I think adding a merit system would be awesome. It should be really hard and time consuming to hit max on your character, and currently its rather an easy thing to do.
I was also loving all the ideas in the original post. To sum up what I feel I was hearing you say is that it would be great to get more of a reward for different achievements rather than just having your title change. Right now it's you've unlocked a or b achievement, and nothing happens. And it doesn't have to be item rewards either. I loved the idea of unlocking tidbits of storyline through exploring more and more of the world map. Great ideas!
I really feel for the any MMO to last a long time (WoW being the exception to the rule) it needs to do more than offer consumable content it needs to engage the players in the world they are playing in.
After reading Yoshi-P's latest comments on how well received the Final trailer was by the community as a powerful part of Final Fantasy history including character development, attachment and relationship as well as unifying symbolism that left most us in a daze of nostalgia, I don't feel like the development team will struggle with keeping players interested. The current plans for housing development mingled with the crafting and gathering classes will likely introduce a sort of Farmville phenomena that many people could potentially spend hours on.
I for one would be more interested in hard hitting, CGI-Laced Narrative similar to the frequent updates that were occurring up until the end of 1.0. Even small well conceived plot lines like those of the Job Quests were incredibly engaging and worth all the time spent doing them. Of course, we shouldn't always expect a lavish reward for completing these types of things. A generous reward a long with the hours of work that goes into streamlining YOUR character directly into a narrative should be enough in most cases. We don't ask for rewards from our favorite book authors nor do we require compensation when we finally beat a console game. If FFXIV 2.0 can continue to bring the same level of EXPERIENCE by drawing us in...a Truly Final Fantasy or any epic RPG experience then you find that you continue to return to the world just to see what's coming next. That's an MMO I hope for.

If they add some real replay value to dungeons and such, it wont be so much of a problem. It is expected that the new dungeons will only be there for drops, and once you got them you'll likely never return to that dungeon. But if they add rewards people want that is not a U/U piece of equipment, like beastman currency, GC seals, or a worthy amount of Gil the dungeons and stuff would see use even after gear drops have been obtained. Levequests are the only form or repetable quest that gives gil. Levequests could be expanded to involve dungeons and other instances too, add different objectives to the dungeon for extra rewards. 1.0 Levequests never left the field. It would have been great if they were able to expand them to other places, and make a lot more of them.
Housing will be a pretty large part of this I think, but I agree; Things like Bestiary's, Card games and Chocobo Raising which will let you log in and get a deeper understanding of the world is a good idea.
Immersive content is important in the longevity of an MMO.
I think a lot of people see small things and think that they aren't important, but in an MMO God is in the details. You'll remember the little things. It's what pushes a good MMO to be a great MMO.

Pond to raise Fish in - Plump up those fishies, amphibians, coral etc
Mog net mail delivery - Delivering moogle mail and getting to hear what the moogles have to say to one another.
Chocograph treasure hunting - Bassically your given a picture and have to find where it was shot to dig up the treasure with your Chocobo.
Quiz npc/monster - You have to answer trivia questions relating to the game lore and possibly the area.
Thats all i can think of right now but i might come back with some more later.
If I can be a chef in the game, I better be able to have a huge custom kitchen in my new "player housing"
For Grand Companies, I wouldn't mind being the chef cooking/storing food in the grand companies refrigerator/pantry and cooking it while in the grand company quarters.... man so many ideas... I want this stuff!
