You misunderstand, let me give you an example. (and please note this is an example.)
Let's use horn glue and aldgoat horns as an example. On my server, the price is pretty dumb. 9-10k per horn average price if there even are any available and 25k on average per block of glue. Those horns are easy to farm if you do it right, but it's not something people want to do so the price is always high for what it is. If there was an NPC that sold horns at 5k each and horn glue for 15k each, prices would become more affordable and it would also take out gil from the player base because instead of player to player exchange, it's a player to npc exchange.
This would also help lower level players since no one makes low level gear and if they made things more affordable for them and it's still taking gil out of the hands of players.
And besides, it will still be a player based economy, just regulated by the prices set by NPC's. People will still sell stuff and plenty of it.

Economic stability set by NPC prices and easier availability of mats/gear no one wants to farm/make. How do you not want this?

ON TOPIC: I really don't care either way if they remove it or keep it. If they remove it, well okay less annoyance. If they keep it, well okay more immersion.
