    Now a good idea would be a way to tame monsters, then after a series of difficult quests, domesticate them and then make/breed them into a mount.

    Red XIII's race, not him as a character. In Final Fantasy Advent Children they are seen running. His species would be cool as hell to see a return. Also, there is a reason why Final Fantasy 7 is so celebrated >.>

    On the note of them adding things from previous games.. I wouldn't like to see Nanaki, even though he was a cool character, but adding a City or something from one of the more futuristic FF titles would be pretty cool. Have it all in ruins and a mystery.
    Long extinct civilizations and jazz.

    Edit: As stated above however, a Gold Saucer'esque playground is a must.
