As I understand it:
Azem is a title, same as Emet-Selch.
When the WoL visit's Elpis, someone (who's never shown on screen) holds the title of Azem. That person is Emet's friend, and they are sundered into 14 shards when Hydaelyn sunders the world.
The WoL (us, the player) is some number of those shards rejoined.
Azem is a title, just as Emet-Selch and Lahabrea are titles. The seat wasn’t emptied as much as it was excised because the last holder of the title of Azem (from whom we share part of a soul) declined to take part in the Zodiark project.
The past self we share a soul with was a holder of the seat of Azem on the Convocation. The previous holder of that seat was Venat who seems to have been their mentor. Nothing at all to do with Hydaelyn, who did not exist yet, nor is WoL Hydaelyn’s child.
Emet-Selch and the Ascians wanted to rejoin the shards of the world that were split when Hydaelyn broke the fabric of reality to stop Zodiark from harvesting the life of the planet to bring back the sacrificed lives initially used to summon it. The other worlds did not exist yet and Zodiark only threatened life on this world, which He Himself helped bring back. But bringing Zodiark back now means destroying all the shards and reuniting His pieces. After that happens, the Ascians likely were going to continue with what they planned to do and harvest aether to gain back the sacrifices from before.
